2 easy and tasty slow cooker recipes

Slow cookers are quite famous in modern kitchens of today. They are especially suitable for a busy family who enjoy home-cooked delicious meals but cannot waste a lot of their time in the kitchen. Slow cookers are time-saving, convenient to use, and budget friendly. With these you can cook delicious meals at home with very less utilization of your time and energy. Slow cooker roasted tomato soup:

This roasted tomato soup is a delicacy of the cold weather. Your family can enjoy it together by the fireplace on cold winter evenings.

Ingredients:

  1.   4 to 5 ripe tomatoes, sliced
  2.   5 garlic cloves
  3.   1 chopped onion
  4.   2 cups of vegetable stock
  5.   ½ tsp cooking oil
  6.   Salt and pepper according to your taste

Method:

  1.   Preheat your oven.
  2.   Spread aluminum foil over a baking dish.
  3.   Lay sliced tomatoes, chopped onion and garlic cloves over the foil. Sprinkle oil over it along with some salt and pepper to taste.
  4.   Roast vegetables for half an hour or until the vegetables become soft. Be careful not to burn them.
  5.   Add the roasted vegetables into the slow cooker with the stock.
  6.   Let cook for at least 2 hours.
  7.   Use an immersion blender to blend your contents right in the cooker. In the absence of an immersion blender, you can transfer your ingredients to the jug of your countertop blender and blend well. You should get a smooth consistency.
  8.   Taste your soup and add salt and pepper as required.

Slow cooker banana oatmeal:

This is a very easy-to-make nutritious and delicious breakfast to start off your day with a boost in your energy level and mood. This recipe makes enough for 6 servings so your whole family can enjoy it together.

  1.  2 cups of water
  2.   4 cups of milk
  3.   1 cup oats
  4.   3 mashed bananas
  5.   1 tsp cinnamon powder
  6.   ½ tsp salt
  7.   ¼ cup maple syrup
  8.   ½ cup chopped walnuts

Method:

  1.   Add water, 1 cup milk, oats, cinnamon, mashed bananas and salt in your slow cooker.
  2.   Close the lid of the cooker and turn it on.
  3.   Let the contents cook on ‘low’ setting for 6 to 8 hours.
  4.   After this time, check to see if the oats are soft.
  5.   When your meal is ready, you can transfer the contents of the cooker to serving bowls.
  6.   Add the remaining milk to the bowl.
  7.   Garnish the meal with maple syrup and chopped walnuts.

Food processor Recipe for Making Chocolate Chip Cookies

Chocolate chip cookies are one of my all time favorites and making them in the food processor avoids all the exhausting hand stirring generally required for preparing cookie dough. Below is a recipe for chocolate chip cookies which is prepared using a food processor. The recipe is easy to make and involves making the perfect cookie dough using the food processor at home. Unlike conventional recipes that involve creaming softened butter and sugar; this recipe involves browning the butter which results in the perfect nutty flavor and the ideal chewy texture. Moreover, baking soda is added earlier to allow it to be activated and fully integrated in the dough. Flour is added lastly to prevent it from being overworked and thereby resulting in tough cookies.

Ingredients

  • 7 ounces unsalted butter
  • ½ cup granulated sugar
  • 3/ cup packed dark brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • 1 ½ cups chocolate chips (semisweet)
  • ¼ cup toasted walnuts (optional)
  • 1 ½ cups all purpose flour

Recipe

  1. Heat the oven to 375 degrees. Use parchment paper for lining two baking sheets. Heat five ounces butter in a skillet over medium high flame. While constantly stirring, cook till the butter has a nutty aroma and is dark golden brown. Remove from heat and add the remaining two ounces butter and mix until it is melted. Add the melted butter to the processor bowl and let it cool for fifteen minutes.
  2. Add brown sugar, granulated sugar, egg, egg yolk, baking soda, vanilla extract, and salt to the processor and process for nearly six seconds till all the ingredients are combined and a smooth mixture is formed. Keep scraping the sides of the bowl as required. Allow the mixture to sit for nearly three minutes. Process again for five minutes and repeat sitting and processing two more times till a smooth, thick, shiny mixture is formed.
  3. Next put walnuts and chocolate chips and pulse (nearly two times) until they are incorporated in the mixture. Add flour and pulse again till its incorporated and not over mixed (nearly 8 pulses).
  4. Roll three tablespoons of dough into ball and with a space of two inches place each raw cookie on the prepared sheet.
  5. Bake cookies in the oven with single sheet at a time. When cookies are golden brown, edges have started to set yet centers are puffy and soft, take them out and allow to cool on for five minutes. Transfer on wire rack and serve when completely cool.
